Amber is easily farmed by bosses in Aquila. All the bosses (I think all of them drop it, but the dungeon end-bosses definitely do) drop Amber, but the fastest way to get it is the secret bosses: Gladiator Dimachaerus in Olumpus, the Sand Squid in Atlantea, and Cronus in Tartarus.

Once you are inside Mount Olympus you can completely bypass all of the "main instance" quests in this dungeon and head down the stairs and straight to the Pit of the Noxii.
