At the moment I'm grinding in Te Awaroa reserve as the hunting seems best during the night I would say 6-9.30pm which I could notice as in the 'Bay of Rest' area (completely to the left of the map) I found also a good spot in the daytime from 2pm to 5pm not far from 'Bay of Rest' or let's say not far from ...Hirschfelden is by far the most beautiful and diverse map. Something completely different is Mississippi. It is a tough hunting area, but the hogs, whitetails and raccoons are worth it. Cuatro Colinas is also totally different but gets a bit boring after a while in my opinion. Lots of roe deer, red deer, wild boar and all kinds of goats...

I found the most success with a .300 mag chasing Plains Bison on Yukon. Running around a certain lake can yield 20ish bison in about 15 minutes. 2 shots per bison usually drops them quick and they're slow enough you can get 4-5 per "stampede".
